To day i want to tell my activity in kitchen to day. To day is the last day of practical week and material of practical to day choux and eclair. I'm go to the campus at 07.00 o'clock. 08.00 o'clock we join pastry for make a oneline. We are waiting our lecture, sir faisal while we are waiting our supervisor to day doing review to us. A They asking about the material yasterday. A few moments later sir faisal jaoin in the pastry for showing to us for methode to make choux and eclair. After sir faisal finished showing to us he give us instruction to doing like what he do.
Ingredient and procedure
- milk 125 ml
- butter 63 gr
- salt 1 gr
- all purpose 93 gr
- egg 156 gr
- Combine liquid, butter, and salt in a heavy saucepan and bring to a boil.
- Remove pan from heat and add the flour all at once. Stir quickly.
- Return the pan to moderate heat and stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
- Transfer the dough to the bowl of a mixer. If you wish to mix by hand, leave it in the saucepan.
- With the paddle attachment, mix at low speed until the dough has cooled slightly. It should be about 140°F (60°C)—still very warm, but not too hot to touch.
- At medium speed, beat in the eggs, a little at a time. Add no more than one-fourth of the eggs at once, and wait until each quantity is completely absorbed before adding the next. When all the eggs are absorbed, the paste is ready to use
And than our supervisor instruck for doing with a group they are helpful. And we dong in pastry and pur supervisor very helpfully. After we finished our dough we are shapes like a snail. After that the dough put in oven for baking with temperature 200 celcius.after that we take a rest for dzhur prayer.after that dough of eclair and choux baking is finished
Becase the eclair and choux still hot, the eclair and choux cooldown first. So sir faisal give us the break time yeyy.... and our supervisor tell us for back at 14.30. So we have a break time for lunch.
And after the beeaktime is up. Me and my friend's go back to kichem and join in pastry and supervisor fill the eclair with pastry cream. And then our lecture tell us for doing general cleaning before we go back to home
